Pumpkin Chocolate Chip Muffins

As soon as Fall hits it is pumpkin spice everything! Pumpkin spice lattes, pumpkin spice bread, pumpkin spice cookies, I’ve even seen pumpkin spice bacon! So if you’re a pumpkin spice enthusiast, you’re going to LOVE these Pumpkin Chocolate Chip Muffins!
This recipe only requires 3 ingredients and can be whipped together very quickly. It’s an easy recipe you can do with your kids, and is guaranteed to make your house smell like yummy pumpkin goodness!
The batter is very thick, so if you want to make it easier to mix and scoop you can add a little bit of water to thin it out and get the consistency you like, but it’s not necessary. They will taste amazing either way.
These muffins are the perfect snack on a chilly fall day right out of the oven, or to take to your next fall party, to add to your Thanksgiving menu, or a quick breakfast you can grab on the go.

Ingredients (makes approximately 18 muffins):
Steps:
- Preheat your oven to 350 degrees. Grease a muffin tin or line it with muffin liners.
- In a large mixing bowl, mix together the spice cake mix and pumpkin purée until completely blended. The batter will be very thick! Feel free to add in a little bit of water to thin it out until you get a consistency you like.
- Fold in the chocolate chips.
- Scoop the batter into your muffin tin filling each cup about ¾ the way full.
- Bake for 15-20 minutes or until a toothpick comes out clean. Let them cool and enjoy!
